Languedoc, France | Red Wine | AOP Saint-Chinian
Grapes: Syrah, Grenache, Carignan
A bold, expressive red from the sun-drenched hills of Languedoc.
Crafted by the talented team at Domaine de Cambis, Caudomato is a small-batch cuvée that captures the intensity and elegance of southern France. The grapes — Syrah, Grenache, and Carignan — are grown on old vines in schist and limestone soils near Saint-Chinian, hand-harvested and vinified with minimal intervention.
Tasting Notes:
Rich and full-bodied, with layers of dark cherry, blackberry, and black olive, lifted by notes of wild herbs and cracked pepper. The palate is structured yet silky, with refined tannins and a long, mineral finish.
Food Pairing:
A natural match for grilled lamb, duck confit, or aubergine stew. Also excellent with aged Comté or earthy mushroom dishes.
Why We Love It:
Caudomato is a true expression of terroir — wild, honest, and beautifully balanced. Low yields and traditional winemaking make it a rare find for lovers of characterful southern reds.

Martin, winemaker of Domaine de Cambis since 2019, has succeeded his mother Annick, founder. After a reconversion from international trade, he trained as a winemaker, fully integrating the family adventure in 2014. With the Organic Agriculture certification obtained in 2021, he promotes century-old vines in Berlou, producing quality wines. His objective: to democratize wine by making it accessible and friendly, while opening the estate to visitors with his partner Caroline.
