The terroir of Terrasses du Larzac is a true geological puzzle. Domaine de Montcalmès, located 30 km northwest of Montpellier, rests primarily on limestone soils and rolled pebbles, similar to those of Châteauneuf-du-Pape.
Montcalmès Red is composed of Syrah, Grenache, and Mourvèdre, with aging in oak barrels for 24 months. Today, Montcalmès is one of the most renowned and sought-after estates in the Languedoc.
Tasting notes
After tasting a vertical of Montcalmès, that is, sampling each vintage between 2005 and 2015 of the same cuvée, it became clear that it takes at least 8 years for Montcalmès Red to fully express the extent of its complexity. If you’re looking to cellar a vintage for a special occasion, Montcalmès is a solid choice; in a good vintage, it will keep for at least 20 years.
Food pairing
If you’ve had the patience to wait at least 8 years before opening this cuvée, then reward yourself by pairing it with a matured Angus beef fillet, enhanced with a rich red wine jus and rustic vegetables. For a vegetarian option, prepare a porcini mushroom risotto, garnished with black truffle shavings and a Parmesan emulsion.
