Vézelay is a relatively unknown appellation located in the northern part of Burgundy, even though vines have been present there since Roman times. Close to the town of Auxerre and not far from Chablis, Vézelay is an excellent terroir for Chardonnay.
Tasting notes
With its very limestone-rich soil, the wines from this terroir are characterised by saline and mineral notes. However, the cuvée La Châtelaine is also quite fruity and, above all, has a lovely length on the palate. It’s one of my favourites!
Food pairing
Pair this cuvée with a two-salmon rillettes to highlight the wine’s salinity alongside that of the fish. For a vegetarian option, go for a samphire salad with chives, parsley, and red onions to play on the freshness and salinity.
