This château, surrounded by its vineyard, was founded in 1610 and today spans 20 hectares divided into 15 plots. Located in Fronsac, not far from Saint-Émilion, it benefits from a slightly different terroir. In Fronsac, the clay-limestone soils are denser than in Saint-Émilion, typically resulting in more powerful wines.
Tasting notes
What I particularly appreciate about Château Dalem is its freshness and complexity, all while maintaining a good structure. Its barrel ageing is well managed, producing an elegant wine that avoids excess. One of the keys to this quality lies in its plot-by-plot vinification, allowing each plot to be treated separately and then blended with precision, much like a painter composing their palette of colours. Another factor is the gentle extraction process used, which gives the wine a velvety texture on the palate.
Food pairing
To accompany this cru, I recommend dishes rich in sauce and fat, as the tannins in the wine will create a beautiful balance in terms of texture and complexity, whether the dish is meat-based or vegetarian.
