Since 1660, the Baudry family has been cultivating vines in the Côte des Bar, located in the southern part of the Champagne region. Today, the 11th generation, represented by brothers Armel and José, offers with the cuvée Héritage a gourmet champagne that highlights the fruit. This cuvée is a “Blanc de Noirs,” meaning it is a Champagne made exclusively from black grapes, in this case, solely from Pinot Noir. The Pinot Noir provides a richer texture and very fruity aromas.Tasting notes
The cuvée Héritage was disgorged after 3 years of ageing, which gives it greater finesse and complexity.
Food pairing
Blanc de Noirs pairs particularly well with spicy dishes. Open it with a Pad Thai or a green curry with coconut milk. The champagne’s effervescence supports the intensity of the spices, while its rich texture and fruity aromas soften the heat of the spices and enhance the flavours of the dish.
