In the heart of the schist soils of Saint-Chinian, the Carignan grape variety dominates as it expresses its depth best on this terrain. Located near Berlou, Domaine de Cambis is precisely situated on this renowned schist soil. Martin, the son, took over the reins in 2019 and promptly converted the estate to organic farming.
Tasting notes
The Caudomato cuvée is composed of approximately 50% Carignan, 30% Grenache, and 20% Syrah. In Occitan, “Caudo” means hot and “Mato” refers to the bush or garrigue. The parcel where this wine originates is south-facing, nestled in the heart of the garrigue, with vines that are around 80 years old. On the palate, this wine evokes black fruits and Mediterranean herbs. The tannins are fine, and the wine is rich and satisfying.
Food pairing
Enjoy this cuvée with a beef stew slow-cooked in red wine and flavoured with thyme and rosemary. For a vegetarian option, a good homemade ratatouille with Provençal herbs will pair perfectly with this cuvée.
